There is good food in Cuba and the meatless dishes are delicious. I don’t recommend that you book less than 4*…the lowest would be 3.5*.
I don’t know where you are planning on actually visiting in Cuba. But at least look at the Sol Melia resorts. They are excellent quality. Some are high end, some are what you’re just looking for.
Tell me where you’re thinking to go and I’ll help you out with which resort to stay at.

Villa Marista, not classy, middle ground
el loco, do you know how many times you have used that Villa Marista joke? It wasn’t even that funny the first time. Why don’t you just get off this website if you have nothing useful to say.
Cuba is very definitely a great place to vacation. The beaches are terrific, the scenery fantastic, there’s no shortage of activities to keep you going day and night. Cubans are proud of their country; they welcome visitors with open arms and will treat you like visiting royalty. Chances are if you go once you will return again and again. Check the sites below they contain tons of information. My personal favorite resort is Sol Melia Rio Luna y Mares, Guardalavaca

Tough luck hun, you will be eating rice and beans the entire time! In Cuba we are famous for eating meat such as pork and fried chicken! But I am an animal lover so I understand, I just couldnt be a vegetarian!
my advise? Stay home and prepare your own meals,
1- all resorts are expensive down there
2- cubans are gonna look at you weird when you tell them that you dont eat meat, specially since sacrificing animals for “Obatala” King of kings is their number one hobby!
Cuban food does not offer a wide selection for vegetarians. Most food in Cuba involves eating some kind of meat and the concept of being a vegetarian for religious, ethical or health purposes is not well known. Vegetables do not feature heavily in the food in Cuba although there should usually be sufficient amounts of fruit available from which to obtain vital vitamins. Otherwise, vegetarian food in Cuba is limited to a few dishes consisting of rice and beans.
